Cheese Tortellini Soup with Kale
Crusty Italian Bread
Ingredients
- 4 Italian smoked chicken sausage links, sliced
- 2 Tbsp olive oil
- 2 cups chopped onion
- 8 cloves garlic, minced
- 1 (32-oz) carton low-sodium chicken broth
- 1 (28-oz) can whole peeled tomatoes, drained and crushed
- 1 (20-oz) pkg refrigerated cheese tortellini
- 3 cups baby kale
- ½ cup freshly grated Parmesan cheese
Instructions
- Sauté sausage in hot oil in a large Dutch oven over medium-high heat 6 minutes or until lightly browned.
- Stir in onion and garlic; cook 2 minutes. Stir in broth and tomatoes. Bring to a boil, reduce heat to medium, and simmer 15 minutes.
- Stir in pasta; cook 5 minutes or until thoroughly heated. Remove from heat; stir in kale. Serve sprinkled with cheese.

- 1 loaf crusty Italian bread
Side Dish Instructions
- Heat bread, if desired. Tear or slice before serving with soup.
