Chicken Satay with Peanut Sauce

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into thin strips
  • 2 Tbsp orange juice
  • 2 Tbsp low-sodium soy sauce, divided
  • ½ tsp dark sesame oil
  • 1 clove garlic, minced
  • 3 Tbsp creamy peanut butter
  • 3 Tbsp warm water
  • 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
  • 1 tsp honey
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat grill to medium-high heat. Thread chicken onto metal or bamboo skewers. Place in a 13- x 9-inch baking dish.
  2. Combine orange juice, 1½ Tbsp soy sauce, oil, and garlic; pour marinade over kabobs. Let stand at room temperature 15 minutes, turning once.
  3. Combine peanut butter, water, cilantro, honey, pepper, and ½ Tbsp soy sauce.
  4. Remove kabobs from marinade, discarding marinade. Grill, covered, 5 to 6 minutes or until chicken is done, turning once. Serve with peanut butter sauce.

  • 1 large clove garlic, minced
  • ¾ tsp minced ginger
  • 2 tsp olive oil
  • ¾ lb green beans, trimmed and cut into 2-inch pieces
  • ¼ cup low-sodium chicken broth
  • 1½ Tbsp low-sodium soy sauce
  • 1 tsp water
  • ¾ tsp cornstarch

Side Dish Instructions

  1. Sauté garlic and ginger in hot oil in a nonstick skillet over medium-high heat 1 minute. Add beans, broth, and soy sauce; bring to a boil.
  2. Cover, reduce heat, and simmer 5 minutes or until beans are crisp-tender.
  3. Combine water and cornstarch; stir into beans, and cook 1 minute or until thickened.
