Chicken Satay with Peanut Sauce

Ingredients
- ¾ lb boneless, skinless chicken breasts, cut into thin strips
- 2 Tbsp orange juice
- 2 Tbsp low-sodium soy sauce, divided
- ½ tsp dark sesame oil
- 1 clove garlic, minced
- 3 Tbsp creamy peanut butter
- 3 Tbsp warm water
- 2 Tbsp chopped fresh cilantro (or use flat-leaf parsley)
- 1 tsp honey
- ¼ tsp crushed red pepper
Instructions
- Preheat grill to medium-high heat. Thread chicken onto metal or bamboo skewers. Place in a 13- x 9-inch baking dish.
- Combine orange juice, 1½ Tbsp soy sauce, oil, and garlic; pour marinade over kabobs. Let stand at room temperature 15 minutes, turning once.
- Combine peanut butter, water, cilantro, honey, pepper, and ½ Tbsp soy sauce.
- Remove kabobs from marinade, discarding marinade. Grill, covered, 5 to 6 minutes or until chicken is done, turning once. Serve with peanut butter sauce.

- ¾ tsp minced ginger
- 2 tsp olive oil
- ¾ lb green beans, trimmed and cut into 2-inch pieces
- ¼ cup low-sodium chicken broth
- 1½ Tbsp low-sodium soy sauce
- 1 tsp water
- ¾ tsp cornstarch
Side Dish Instructions
- Sauté garlic and ginger in hot oil in a nonstick skillet over medium-high heat 1 minute. Add beans, broth, and soy sauce; bring to a boil.
- Cover, reduce heat, and simmer 5 minutes or until beans are crisp-tender.
- Combine water and cornstarch; stir into beans, and cook 1 minute or until thickened.
