Ingredients

  • ½ cup walnuts
  • ½ (19-oz) pkg spicy or mild Italian sausage links, casings removed
  • 1 (8-oz) pkg baby portobello mushrooms, chopped
  • 3 stalks celery, chopped
  • 2 large carrots, chopped
  • ¼ cup chopped onion
  • 1 large clove garlic, minced
  • ½ tsp rubbed sage
  • ⅛ tsp pepper
  • ½ Tbsp olive oil
  • 1 small Honeycrisp apple, chopped
  • ¼ cup chopped fresh parsley

Instructions

  1. Toast nuts in a dry large skillet over medium heat 3 to 4 minutes or until fragrant; remove from skillet.
  2. Cook sausage in the same skillet over medium heat 6 to 8 minutes or until browned and crumbly; drain on paper towels, and add to bowl with nuts.
  3. Sauté mushrooms, celery, carrots, onion, garlic, sage, and pepper in hot oil in skillet over medium-high heat 10 to 15 minutes or until tender. Stir in apple and parsley.
