Ingredients
- ½ cup walnuts
- ½ (19-oz) pkg spicy or mild Italian sausage links, casings removed
- 1 (8-oz) pkg baby portobello mushrooms, chopped
- 3 stalks celery, chopped
- 2 large carrots, chopped
- ¼ cup chopped onion
- 1 large clove garlic, minced
- ½ tsp rubbed sage
- ⅛ tsp pepper
- ½ Tbsp olive oil
- 1 small Honeycrisp apple, chopped
- ¼ cup chopped fresh parsley
Instructions
- Toast nuts in a dry large skillet over medium heat 3 to 4 minutes or until fragrant; remove from skillet.
- Cook sausage in the same skillet over medium heat 6 to 8 minutes or until browned and crumbly; drain on paper towels, and add to bowl with nuts.
- Sauté mushrooms, celery, carrots, onion, garlic, sage, and pepper in hot oil in skillet over medium-high heat 10 to 15 minutes or until tender. Stir in apple and parsley.
