Turkey-Pumpkin Chili
Fresh Orange-Avocado SaladIngredients
- ¾ lb ground turkey
 - 1 red bell pepper, chopped
 - ½ cup chopped onion
 - 1 clove garlic, minced
 - ½ cup water
 - ½ (15-oz) can pumpkin puree
 - ½ (14.5-oz) can petite-diced tomatoes
 - 2¼ tsp chili powder
 - 1 tsp ground cumin
 - ¼ tsp salt
 - ¼ tsp pepper
 
Instructions
- Cook turkey, bell pepper, onion, and garlic in a large saucepan over medium-high heat 8 minutes or until turkey is browned and crumbly; drain.
 - Stir in water and remaining ingredients. Reduce heat and simmer 20 minutes or until thoroughly heated.
 
Side Dish Ingredients
- 1 Tbsp lime juice
 - 1 Tbsp olive oil
 - ½ tsp crushed red pepper
 - ¼ tsp salt
 - 1 navel orange, peeled and sectioned
 - 1 avocado, diced
 
Side Dish Instructions
- Whisk together lime juice, oil, red pepper, and salt in a serving bowl. Add orange; toss well.
 - Stir in avocado just before serving.
