Turkey-Pumpkin Chili

Ingredients

  • ¾ lb ground turkey
  • 1 red bell pepper, chopped
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • ½ cup water
  • ½ (15-oz) can pumpkin puree
  • ½ (14.5-oz) can petite-diced tomatoes
  • 2¼ tsp chili powder
  • 1 tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook turkey, bell pepper, onion, and garlic in a large saucepan over medium-high heat 8 minutes or until turkey is browned and crumbly; drain.
  2. Stir in water and remaining ingredients. Reduce heat and simmer 20 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 Tbsp lime juice
  • 1 Tbsp olive oil
  • ½ tsp crushed red pepper
  • ¼ tsp salt
  • 1 navel orange, peeled and sectioned
  • 1 avocado, diced

Side Dish Instructions

  1. Whisk together lime juice, oil, red pepper, and salt in a serving bowl. Add orange; toss well.
  2. Stir in avocado just before serving.
