Ingredients
- ¼ cup orange juice
- 1 Tbsp low-sodium soy sauce
- ⅛ tsp crushed red pepper
- 2 (6-oz) salmon fillets
- 1 green onion, thinly sliced
Instructions
- Preheat oven to 450°F. Bring orange juice, soy sauce, and red pepper to a boil in a small saucepan over high heat; boil 4 minutes or until syrupy.
- Place salmon, skin sides down, on a greased foil-lined rimmed baking sheet. Brush orange juice mixture over fish.
- Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with onion.

- 2 Tbsp sour cream
- 1 tsp honey
- 1 tsp curry powder
- 2 cups tricolor coleslaw
- ½ cup sliced red bell pepper
- ⅛ tsp salt

- 2 tsp chopped fresh parsley
Side Dish Instructions
- Whisk together mayonnaise, sour cream, honey, and curry powder in a serving bowl.
- Add slaw and bell pepper; toss to coat. Season with salt and pepper.
- Cover and chill at least 30 minutes, if desired. Sprinkle with parsley before serving.
