Ingredients

  • ¼ cup orange juice
  • 1 Tbsp low-sodium soy sauce
  • ⅛ tsp crushed red pepper
  • 2 (6-oz) salmon fillets
  • 1 green onion, thinly sliced

Instructions

  1. Preheat oven to 450°F. Bring orange juice, soy sauce, and red pepper to a boil in a small saucepan over high heat; boil 4 minutes or until syrupy.
  2. Place salmon, skin sides down, on a greased foil-lined rimmed baking sheet. Brush orange juice mixture over fish.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with onion.

  • 2 Tbsp sour cream
  • 1 tsp honey
  • 1 tsp curry powder
  • 2 cups tricolor coleslaw

  • 2 tsp chopped fresh parsley

Side Dish Instructions

  1. Whisk together mayonnaise, sour cream, honey, and curry powder in a serving bowl.
  2. Add slaw and bell pepper; toss to coat. Season with salt and pepper.
  3. Cover and chill at least 30 minutes, if desired. Sprinkle with parsley before serving.
