Orange-Ginger Chicken

Ingredients

  • 1 Tbsp olive oil, divided
  • 1½ lb bone-in chicken thighs 
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • 1½ tsp minced ginger
  • ¼ cup orange juice
  • 1 cup grape tomatoes
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Rub 1½ tsp oil over chicken; sprinkle with salt and pepper. Cook chicken in 1½ tsp hot oil in an ovenproof skillet 5 to 6 minutes per side; remove from skillet.
  2. Add garlic and ginger to skillet; cook 1 minute. Add orange juice, and cook 1 minute, scraping pan to loosen browned bits. Add tomatoes; cook 3 minutes, stirring occasionally.
  3. Nestle chicken into tomato mixture. Bake 5 to 6 minutes or until chicken is done. Sprinkle with cilantro.

  • 1 (12-oz) pkg frozen riced cauliflower
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp olive oil
  • ½ tsp orange zest
  • ⅛ tsp salt 
  • ⅛ tsp pepper

Side Dish Instructions

  1. Microwave cauliflower according to package directions.
  2. Stir together cauliflower, cilantro, oil, orange zest, salt, and pepper.
