Orange-Ginger Chicken
Citrus Cauli-RiceIngredients
- 1 Tbsp olive oil, divided
- 1½ lb bone-in chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic, minced
- 1½ tsp minced ginger
- ¼ cup orange juice
- 1 cup grape tomatoes
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 425°F. Rub 1½ tsp oil over chicken; sprinkle with salt and pepper. Cook chicken in 1½ tsp hot oil in an ovenproof skillet 5 to 6 minutes per side; remove from skillet.
- Add garlic and ginger to skillet; cook 1 minute. Add orange juice, and cook 1 minute, scraping pan to loosen browned bits. Add tomatoes; cook 3 minutes, stirring occasionally.
- Nestle chicken into tomato mixture. Bake 5 to 6 minutes or until chicken is done. Sprinkle with cilantro.

- 1 (12-oz) pkg frozen riced cauliflower
- 1 Tbsp chopped fresh cilantro
- 1 Tbsp olive oil
- ½ tsp orange zest
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Microwave cauliflower according to package directions.
- Stir together cauliflower, cilantro, oil, orange zest, salt, and pepper.
