Stuffing-Crusted Lemon-Garlic Tilapia

Ingredients

  • 2 (6-oz) tilapia fillets (thawed, if frozen)
  • 2 Tbsp butter
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp lemon zest
  • ½ cup savory herb stuffing mix

Instructions

  1. Preheat broiler. Season fish lightly with salt and pepper.
  2. Melt butter in a nonstick skillet over medium-high heat. Add fish, and cook, without turning, 5 minutes. Remove fish from skillet, and place cooked side down, in a lightly greased 9-inch baking dish.
  3. Stir together lemon juice, oil, garlic, and lemon zest; pour over fish. Sprinkle with stuffing mix. Broil 3 to 4 minutes or until golden brown.

  • 1 (4.8-oz) box herb angel hair pasta mix
  • ¾ cup milk
  • 2 Tbsp butter
  • ½ lb asparagus, trimmed
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook pasta according to package directions, adding milk and butter.
  2. Preheat oven to 425°F. Toss together asparagus and oil on a rimmed baking sheet; bake 10 minutes or until crisp tender.
