Lemon-Garlic Butter Salmon

Ingredients
- 6 (6-oz) salmon fillets
- ½ tsp salt
- ¼ tsp pepper
- 3 Tbsp olive oil, divided
- 3 lemons, halved crosswise and seeded
- ½ cup low-sodium chicken broth
- 1 clove garlic, smashed
- 1 Tbsp butter
Instructions
- Preheat oven to 400°F. Sprinkle fish with salt and pepper. Cook in 2 Tbsp hot oil over medium-high heat in a large ovenproof skillet 3 minutes. Turn fish over.
- Transfer skillet to oven, and bake 6 to 8 minutes or until fish flakes with a fork.
- Remove fish from pan. Return pan to heat; add 1 Tbsp oil. Add lemons, cut sides down; cook 2 minutes. Squeeze juice into pan; discard lemons.
- Whisk broth and garlic into lemon juice; bring to a boil. Cook 30 seconds, whisking constantly. Remove from heat; discard garlic. Whisk in butter. Serve over fish.
Side Dish Ingredients
- 3 carrots, cut into chunks
- 2 golden beets, cut into wedges
- 1 red onion, cut into wedges
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Preheat oven to 400°F. Toss carrots, beets, onion, oil, salt, and pepper; spread in a a single layer in a roasting pan. Bake 30 minutes or until golden and tender.
- Sprinkle with basil.
