Marinate Ahead
Carne Asada
Roasted Potatoes, Peppers, and OnionsIngredients
- ½ lb flank steak, trimmed (or use top sirloin)
- 2 cloves garlic, minced
- 3 Tbsp fresh orange juice
- 1½ Tbsp fresh lemon juice
- 1½ Tbsp low-sodium soy sauce
- ½ bunch fresh cilantro, chopped (or use flat-leaf parsley)
- 1 tsp chili powder
- 1 tsp ground cumin
- 1½ Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 avocado, sliced
- ½ cup fresh salsa
Instructions
- Place steak in a large zip-top plastic freezer bag.
- Whisk together garlic and next 7 ingredients; reserve 3 Tbsp marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
- Remove steak from marinade, discarding marinade; sprinkle steak with salt and pepper.
- Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let stand 10 minutes before thinly slicing across the grain.
- Serve with reserved 3 Tbsp marinade, avocado, and salsa.
Side Dish Ingredients
- ½ lb organic new potatoes, cut into wedges
- 1 (8-oz) pkg organic sweet mini peppers, stemmed, seeded and halved
- 1 red onion, cut into wedges
- 2 Tbsp olive oil
- 1 Tbsp smoked paprika
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet.
- Bake 20 minutes or until vegetables are browned and tender.
