Blackened Tilapia Quesadillas

Ingredients

  • 4 (4-oz) tilapia fillets
  • 4 tsp blackened seasoning
  • 2 Tbsp olive oil
  • 1 (15-oz) can black beans, drained and rinsed
  • 4 green onions, sliced
  • 12 soft taco-size whole wheat tortillas
  • 1½ cups freshly shredded mozzarella cheese

Instructions

  1. Rub fish with seasoning and drizzle with oil. Cook, in batches, in a nonstick skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork. Break fish into chunks; toss with beans and onions.
  2. Top 6 tortillas with ¾ cup cheese and fish mixture. Top with remaining cheese and tortillas.
  3. Cook quesadillas in skillet coated in cooking spray 2 to 4 minutes per side or until golden and cheese is melted.

Side Dish Ingredients

  • 1 red onion, cut into wedges
  • 2 Tbsp olive oil
  • 2 avocados, mashed
  • 2 Tbsp lemon juice
  • ½ tsp garlic powder
  • 1 (9-oz) pkg baked pita chips

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together onion and oil over a baking sheet. Bake 25 minutes or until browned. Cool and coarsely chop.
  2. Meanwhile, mix together together lemon juice; stir in onion, garlic powder, and desired amounts of salt and pepper. Serve guacamole with chips.
