Creamy Sun-Dried Tomato Shrimp
Basil Zucchini "Noodles"Ingredients
- ½ onion, chopped
- 1 tsp minced garlic
- 2 Tbsp olive oil
- ¼ cup chopped sun-dried tomatoes
- 1 cup heavy cream
- ½ tsp salt
- 1 lb peeled and deveined, large raw shrimp
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Sauté onion and garlic in hot oil in large skillet over medium heat until tender. Add tomatoes, and cook 4 minutes.
- Reduce heat to low; stir in cream, salt, and shrimp. Cook 3 minutes or until shrimp turn pink.
- Serve over Basil Zucchini "Noodles" recipe, and sprinkle with cheese.

- 1 (12-oz) pkg frozen zucchini noodles
- 2 Tbsp extra virgin olive oil
- 1 tsp minced garlic
- 2 Tbsp chopped fresh basil
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Heat zucchini noodles according to package directions.
- Combine oil, garlic, basil, salt, and pepper in a bowl; add zucchini, and toss.
