Creamy Sun-Dried Tomato Shrimp

Ingredients

  • ½ onion, chopped
  • 1 tsp minced garlic
  • 2 Tbsp olive oil
  • ¼ cup chopped sun-dried tomatoes
  • 1 cup heavy cream
  • ½ tsp salt
  • 1 lb peeled and deveined, large raw shrimp
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Sauté onion and garlic in hot oil in large skillet over medium heat until tender. Add tomatoes, and cook 4 minutes.
  2. Reduce heat to low; stir in cream, salt, and shrimp. Cook 3 minutes or until shrimp turn pink.
  3. Serve over Basil Zucchini "Noodles" recipe, and sprinkle with cheese.

  • 1 (12-oz) pkg frozen zucchini noodles
  • 2 Tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 2 Tbsp chopped fresh basil
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat zucchini noodles according to package directions.
  2. Combine oil, garlic, basil, salt, and pepper in a bowl; add zucchini, and toss.
