Ingredients

  • 1¼ lb ground turkey
  • 2 Tbsp olive oil
  • ½ (14.5-oz) can no-salt-added fire-roasted diced tomatoes, drained
  • 1 Tbsp Greek seasoning
  • ½ tsp salt
  • 6 cups shredded romaine lettuce
  • 1 cup grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • ½ cup olive oil vinaigrette

Instructions

  1. Cook turkey in hot oil in a large skillet over medium heat 7 minutes or until browned and done.
  2. Add diced tomatoes, seasoning, and salt; cook 2 minutes or until hot and bubbly.
  3. Serve turkey mixture over lettuce on each plate. Top with grape tomatoes and cheese. Drizzle with vinaigrette.
