Cheesy Tuscan Chicken Casserole

- 1 (16-oz) pkg ziti pasta
- ¼ cup butter
- 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 (8-oz) pkg whole mushrooms, sliced
- 1 cup chopped onion
- 3 cloves garlic, minced
- 3 Tbsp all-purpose flour
- 1 (15-oz) can chicken broth
- 1 cup heavy cream
- 1 (24-oz) jar tomato basil pasta sauce
- 1 (8-oz) pkg shredded mozzarella cheese, divided
- 1 (10-oz) pkg spinach
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions; drain well.
- Meanwhile, melt butter in a large Dutch oven over medium-high heat. Add chicken, mushrooms, onion, and garlic; cook, stirring occasionally, until chicken is done. Sprinkle flour over chicken mixture; cook, stirring constantly, 2 minutes.
- Gradually stir in broth and cream; bring to a boil, reduce heat, and simmer until mixture is slightly thickened. Stir in pasta sauce and 1 cup cheese. Gradually stir in spinach until wilted. Add pasta; toss.
- Spoon mixture into a lightly greased 13- x 9-inch baking dish; sprinkle with 1 cup cheese. Bake 30 minutes or until hot and bubbly.
