Cheesy Tuscan Chicken Casserole

Ingredients

  • 1 (16-oz) pkg ziti pasta
  • ¼ cup butter
  • 2 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 (8-oz) pkg whole mushrooms, sliced
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 3 Tbsp all-purpose flour
  • 1 (15-oz) can chicken broth
  • 1 cup heavy cream
  • 1 (24-oz) jar tomato basil pasta sauce
  • 1 (8-oz) pkg shredded mozzarella cheese, divided
  • 1 (10-oz) pkg spinach

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain well.
  2. Meanwhile, melt butter in a large Dutch oven over medium-high heat. Add chicken, mushrooms, onion, and garlic; cook, stirring occasionally, until chicken is done. Sprinkle flour over chicken mixture; cook, stirring constantly, 2 minutes.
  3. Gradually stir in broth and cream; bring to a boil, reduce heat, and simmer until mixture is slightly thickened. Stir in pasta sauce and 1 cup cheese. Gradually stir in spinach until wilted. Add pasta; toss.
  4. Spoon mixture into a lightly greased 13- x 9-inch baking dish; sprinkle with 1 cup cheese. Bake 30 minutes or until hot and bubbly.
