Migas
Ingredients
- 6 large eggs
- ½ tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- ½ lb lean ground turkey breakfast sausage
- 1 tsp olive oil
- 1 clove garlic, minced
- 1 small red bell pepper, chopped
- 1 cup chopped onion
- 4 corn tortillas, cut into strips
Instructions
- Whisk together eggs, cumin, salt, and pepper.
- Cook sausage in hot oil in large nonstick skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly. Transfer sausage to a plate, reserving oil and drippings in skillet.
- Add garlic to skillet; cook 30 seconds or until tender and fragrant. Add bell pepper and onion; cook 6 to 8 minutes or until tender.
- Add tortillas; cook 2 minutes, stirring often.
- Return sausage to skillet. Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly.
