Ingredients

  • 6 large eggs
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lb lean ground turkey breakfast sausage
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1 small red bell pepper, chopped
  • 1 cup chopped onion
  • 4 corn tortillas, cut into strips

Instructions

  1. Whisk together eggs, cumin, salt, and pepper.
  2. Cook sausage in hot oil in large nonstick skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly. Transfer sausage to a plate, reserving oil and drippings in skillet.
  3. Add garlic to skillet; cook 30 seconds or until tender and fragrant. Add bell pepper and onion; cook 6 to 8 minutes or until tender.
  4. Add tortillas; cook 2 minutes, stirring often.
  5. Return sausage to skillet. Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly.
