Grape-Pecan Chicken Salad
Ingredients
- 2 Tbsp chopped pecans
- 1½ cups chopped rotisserie chicken
- 6 Tbsp olive-oil mayonnaise
- ¾ tsp curry powder
- 1½ tsp sugar
- ¼ tsp salt
- ¾ cup chopped celery
- ¾ cup seedless red or green grapes, halved
- ½ (5-oz) pkg baby arugula
Instructions
- Toast pecans in a dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
- Combine pecans, chicken, mayonnaise, curry, sugar, and salt in a large bowl; stir in celery and grapes. Serve over arugula.
