Grape-Pecan Chicken Salad

Ingredients

  • 2 Tbsp chopped pecans
  • 1½ cups chopped rotisserie chicken
  • 6 Tbsp olive-oil mayonnaise
  • ¾ tsp curry powder
  • 1½ tsp sugar
  • ¼ tsp salt
  • ¾ cup chopped celery
  • ¾ cup seedless red or green grapes, halved
  • ½ (5-oz) pkg baby arugula

Instructions

  1. Toast pecans in a dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
  2. Combine pecans, chicken, mayonnaise, curry, sugar, and salt in a large bowl; stir in celery and grapes. Serve over arugula.
