Lamb Meatballs

Ingredients

  • 1½ lb ground lamb
  • ½ cup minced onion
  • ¼ cup chopped fresh parsley
  • 2 Tbsp almond flour
  • 1 Tbsp minced garlic
  • 1Tbsp Greek seasoning
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat oven to 425°F. Combine all ingredients in a large bowl. Shape into 18 large meatballs. Place on a lightly greased rimmed baking sheet.
  2. Bake 18 to 20 minutes or until no longer pink.

Side Dish Ingredients

  • 4 large zucchini, cut into ½-inch rounds
  • 2 red bell peppers, sliced
  • 2 Tbsp finely chopped fresh mint
  • 2 Tbsp avocado oil
  • 1 tsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together zucchini, bell peppers, mint, oil, garlic, salt, and pepper in a roasting pan.
  2. Bake 20 minutes, stirring once, or until tender and slightly browned.
