Lamb Meatballs
Minted Zucchini RoundsIngredients
- 1½ lb ground lamb
- ½ cup minced onion
- ¼ cup chopped fresh parsley
- 2 Tbsp almond flour
- 1 Tbsp minced garlic
- 1Tbsp Greek seasoning
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs, lightly beaten
Instructions
- Preheat oven to 425°F. Combine all ingredients in a large bowl. Shape into 18 large meatballs. Place on a lightly greased rimmed baking sheet.
- Bake 18 to 20 minutes or until no longer pink.
Side Dish Ingredients
- 4 large zucchini, cut into ½-inch rounds
- 2 red bell peppers, sliced
- 2 Tbsp finely chopped fresh mint
- 2 Tbsp avocado oil
- 1 tsp minced garlic
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together zucchini, bell peppers, mint, oil, garlic, salt, and pepper in a roasting pan.
- Bake 20 minutes, stirring once, or until tender and slightly browned.
