Salmon with Pineapple Salsa
Spiced Brown Rice
Ingredients
- 2 (6-oz) salmon fillets
- 2 Tbsp olive oil, divided
- ½ tsp salt
- ¼ tsp pepper
- 1 cup chopped pineapple
- 1 orange, peeled and sectioned
- ½ cup chopped red bell pepper
- 2 green onions, chopped
- 1 tsp lime juice
- ¼ tsp ground cumin
- ⅛ tsp cayenne pepper
Instructions
- Preheat broiler. Place fish on a broiler pan; brush with 1 Tbsp oil and sprinkle with salt and pepper. Broil 6 to 8 minutes or until fish flakes with a fork.
- Meanwhile, toss together pineapple, orange, bell pepper, onions, lime juice, cumin, cayenne, and 1 Tbsp oil. Serve salsa over fish.

- ⅛ tsp cayenne pepper
Side Dish Instructions
- Cook rice according to package directions. Stir in salt and cayenne. Let stand 5 minutes before serving.
