Salmon with Pineapple Salsa

Ingredients

  • 2 (6-oz) salmon fillets
  • 2 Tbsp olive oil, divided
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup chopped pineapple
  • 1 orange, peeled and sectioned
  • ½ cup chopped red bell pepper
  • 2 green onions, chopped
  • 1 tsp lime juice
  • ¼ tsp ground cumin
  • ⅛ tsp cayenne pepper

Instructions

  1. Preheat broiler. Place fish on a broiler pan; brush with 1 Tbsp oil and sprinkle with salt and pepper. Broil 6 to 8 minutes or until fish flakes with a fork.
  2. Meanwhile, toss together pineapple, orange, bell pepper, onions, lime juice, cumin, cayenne, and 1 Tbsp oil. Serve salsa over fish.

  • ½ tsp salt
  • ⅛ tsp cayenne pepper

Side Dish Instructions

  1. Cook rice according to package directions. Stir in salt and cayenne. Let stand 5 minutes before serving.
