Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ½ (15-oz) pkg frozen mixed vegetables
  • 1 (10.75-oz) can cream of chicken soup
  • ¼ cup milk
  • ½ (6-oz) box savory-herb stuffing mix
  • ½ cup chicken broth

Instructions

  1. Preheat oven to 350°F. Combine chicken and vegetables in a lightly greased 9-inch baking dish. Season lightly with salt and pepper.
  2. Stir together soup and milk; pour over chicken mixture. Sprinkle with stuffing mix. Drizzle broth over stuffing mix.
  3. Cover and bake 30 minutes. Uncover and bake 10 to 15 minutes longer or until stuffing is browned and chicken is done.

  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • ½ (10-oz) pkg chopped romaine lettuce (or use other salad greens)
  • 1 cup grape tomatoes, halved
  • ¼ cup shredded Parmesan cheese

Side Dish Instructions

  1. Whisk together oil, lemon juice, and salt and pepper to taste in a large bowl. Add lettuce and tomatoes; toss. Sprinkle with cheese.
