Savory Herb Chicken Casserole
Lemon-Parmesan SaladIngredients
- ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
- ½ (15-oz) pkg frozen mixed vegetables
- 1 (10.75-oz) can cream of chicken soup
- ¼ cup milk
- ½ (6-oz) box savory-herb stuffing mix
- ½ cup chicken broth
Instructions
- Preheat oven to 350°F. Combine chicken and vegetables in a lightly greased 9-inch baking dish. Season lightly with salt and pepper.
- Stir together soup and milk; pour over chicken mixture. Sprinkle with stuffing mix. Drizzle broth over stuffing mix.
- Cover and bake 30 minutes. Uncover and bake 10 to 15 minutes longer or until stuffing is browned and chicken is done.

- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- ½ (10-oz) pkg chopped romaine lettuce (or use other salad greens)
- 1 cup grape tomatoes, halved
- ¼ cup shredded Parmesan cheese

- Whisk together oil, lemon juice, and salt and pepper to taste in a large bowl. Add lettuce and tomatoes; toss. Sprinkle with cheese.
