Pork Schnitzel
Sweet and Sour Red Cabbage and Steamed Green Beans
Ingredients
- 1½ lb boneless pork loin chops, halved lengthwise
- 2 large eggs, lightly beaten
- 1½ cups whole wheat panko breadcrumbs
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 lemons, cut into wedges
- ⅓ cup chopped fresh parsley
Instructions
- Pound pork chops to ¼-inch thickness in a zip-top plastic bag using the heel of your hand. Dip pork in egg, and dredge in panko, pressing gently to adhere.
- Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 2 to 3 minutes per side or until golden brown and done.
- Sprinkle with salt and pepper while warm; squeeze lemon juice over pork, and sprinkle with parsley.

- 1 (3-lb) red cabbage, thinly sliced
- 2 Tbsp olive oil
- ½ cup balsamic vinegar
- ½ cup low-sodium chicken broth
- ¼ cup honey
- ½ tsp salt
- ½ tsp pepper
- 1 (12-oz) pkg thin green beans
Side Dish Instructions
- Sauté cabbage in hot oil in a large Dutch oven over medium heat 5 minutes or until wilted.
- Combine vinegar, broth, and honey; add to cabbage. Cover, reduce heat, and simmer 30 minutes, stirring often; stir in salt and pepper.
- Steam green beans according to package directions.
