Pork Schnitzel

Sweet and Sour Red Cabbage and Steamed Green Beans

Ingredients

  • 1½ lb boneless pork loin chops, halved lengthwise
  • 2 large eggs, lightly beaten
  • 1½ cups whole wheat panko breadcrumbs
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 lemons, cut into wedges
  • ⅓ cup chopped fresh parsley

Instructions

  1. Pound pork chops to ¼-inch thickness in a zip-top plastic bag using the heel of your hand. Dip pork in egg, and dredge in panko, pressing gently to adhere.
  2. Cook pork, in batches, in hot oil in a large nonstick skillet over medium heat 2 to 3 minutes per side or until golden brown and done.
  3. Sprinkle with salt and pepper while warm; squeeze lemon juice over pork, and sprinkle with parsley.

  • 1 (3-lb) red cabbage, thinly sliced
  • 2 Tbsp olive oil
  • ½ cup balsamic vinegar
  • ½ cup low-sodium chicken broth
  • ¼ cup honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (12-oz) pkg thin green beans

Side Dish Instructions

  1. Sauté cabbage in hot oil in a large Dutch oven over medium heat 5 minutes or until wilted.
  2. Combine vinegar, broth, and honey; add to cabbage. Cover, reduce heat, and simmer 30 minutes, stirring often; stir in salt and pepper.
  3. Steam green beans according to package directions.
