Ingredients

  • ⅓ cup panko breadcrumbs (preferably whole wheat)
  • ¼ cup roasted garlic mayonnaise 
  • ⅛ tsp pepper
  • ⅛ tsp kosher salt
  • 2 (6-oz) grouper fillets 
  • 2 tsp olive oil
  • 1½ Tbsp lemon juice
  • 1½ Tbsp white wine (or use low-sodium chicken broth)
  • 1 Tbsp capers
  • 2 tsp butter

Instructions

  1. Place panko in a shallow bowl. Stir together mayonnaise, pepper, and salt in a large bowl. Dip fish in mayonnaise mixture; dredge in panko, shaking off excess.
  2. Cook fish in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Remove from skillet.
  3. Add lemon juice and wine to skillet, scraping skillet to loosen browned bits. Cook 2 minutes or until reduced by half. Add capers and butter; cook 2 minutes or until slightly thickened. Serve sauce with fish.
  4. Serve over Sauteed Spinach recipe, if desired.

  • 1 small clove garlic, minced
  • 2 tsp olive oil
  • 1 (10-oz) pkg baby spinach
  • ⅛ tsp salt
  • Dash of pepper

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 30 seconds. Gradually add spinach; cook 2 minutes or just until wilted. Stir in salt and pepper.
