Crispy Grouper Piccata

Ingredients
- ⅓ cup panko breadcrumbs (preferably whole wheat)
- ¼ cup roasted garlic mayonnaise
- ⅛ tsp pepper
- ⅛ tsp kosher salt
- 2 (6-oz) grouper fillets
- 2 tsp olive oil
- 1½ Tbsp lemon juice
- 1½ Tbsp white wine (or use low-sodium chicken broth)
- 1 Tbsp capers
- 2 tsp butter
Instructions
- Place panko in a shallow bowl. Stir together mayonnaise, pepper, and salt in a large bowl. Dip fish in mayonnaise mixture; dredge in panko, shaking off excess.
- Cook fish in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Remove from skillet.
- Add lemon juice and wine to skillet, scraping skillet to loosen browned bits. Cook 2 minutes or until reduced by half. Add capers and butter; cook 2 minutes or until slightly thickened. Serve sauce with fish.
- Serve over Sauteed Spinach recipe, if desired.

- 1 small clove garlic, minced
- 2 tsp olive oil
- 1 (10-oz) pkg baby spinach
- ⅛ tsp salt
- Dash of pepper
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 30 seconds. Gradually add spinach; cook 2 minutes or just until wilted. Stir in salt and pepper.
