Chicken Chili

Ingredients

  • ¾ cup chopped onion
  • 1 jalapeño pepper, seeded and chopped (see Note)
  • 2 small cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can low-sodium chicken broth
  • 1 cup water
  • ½ (15.5-oz) can cannellini beans, drained and rinsed
  • ½ (4-oz) can chopped green chiles
  • 1½ cups shredded rotisserie chicken
  • ½ cup milk
  • 3 Tbsp chopped fresh cilantro (or use fresh flat-leaf parsley)
  • 1½ tsp ground cumin
  • ½ cup sour cream
  • ½ cup shredded Cheddar cheese
  • ½ avocado, chopped
  • 2 Tbsp thinly sliced radishes
  • Fresh cilantro sprigs (optional)

Instructions

  1. Cook onion, jalapeño, and garlic in hot oil in a stock pot over medium-high heat 5 to 6 minutes, stirring occasionally.
  2. Stir in broth, water, beans, and chiles; bring to a boil over medium heat. Reduce heat, and simmer 30 minutes.
  3. Stir in chicken, milk, cilantro, and cumin; simmer 10 minutes or until slightly thickened.
  4. Gradually add sour cream and cheese, stirring until cheese is melted.
  5. Top with avocado and radishes. Garnish with cilantro sprigs, if desired.

Side Dish Ingredients

  • 3 cups torn Bibb lettuce
  • ¼ cup chopped red onion
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • Dash of salt

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
