Chicken Chili
Bibb Lettuce SaladIngredients
- ¾ cup chopped onion
- 1 jalapeño pepper, seeded and chopped (see Note)
- 2 small cloves garlic, minced
- 1 Tbsp olive oil
- 1 (14.5-oz) can low-sodium chicken broth
- 1 cup water
- ½ (15.5-oz) can cannellini beans, drained and rinsed
- ½ (4-oz) can chopped green chiles
- 1½ cups shredded rotisserie chicken
- ½ cup milk
- 3 Tbsp chopped fresh cilantro (or use fresh flat-leaf parsley)
- 1½ tsp ground cumin
- ½ cup sour cream
- ½ cup shredded Cheddar cheese
- ½ avocado, chopped
- 2 Tbsp thinly sliced radishes
- Fresh cilantro sprigs (optional)
Instructions
- Cook onion, jalapeño, and garlic in hot oil in a stock pot over medium-high heat 5 to 6 minutes, stirring occasionally.
- Stir in broth, water, beans, and chiles; bring to a boil over medium heat. Reduce heat, and simmer 30 minutes.
- Stir in chicken, milk, cilantro, and cumin; simmer 10 minutes or until slightly thickened.
- Gradually add sour cream and cheese, stirring until cheese is melted.
- Top with avocado and radishes. Garnish with cilantro sprigs, if desired.
Side Dish Ingredients
- 3 cups torn Bibb lettuce
- ¼ cup chopped red onion
- 1 Tbsp extra virgin olive oil
- 1 Tbsp apple cider vinegar
- Dash of salt
Side Dish Instructions
- Toss together all ingredients in a bowl.
