Ingredients

  • 3 (6-oz) boneless, skinless chicken breasts
  • ½ Tbsp chili powder
  • ⅛ tsp salt
  • ⅛ tsp cayenne pepper
  • 6 slices bacon
  • 1 Tbsp olive oil
  • ½ (8-oz) container guacamole
  • ¼ cup sour cream
  • 1 Tbsp chopped fresh flat-leaf parsley

Instructions

  1. Preheat oven to 425°F. Sprinkle chicken with chili powder, salt, and cayenne pepper. Wrap each piece with 2 slices bacon.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side. Transfer chicken to a foil-lined baking sheet.
  3. Bake 10 minutes or until chicken is done and bacon is crisp.
  4. Meanwhile, stir together guacamole, sour cream, and parsley; serve sauce with chicken.

  • 1 small clove garlic, minced
  • ¾ lb green beans, trimmed
  • 1 cup grape tomatoes
  • 1 Tbsp olive oil
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Sauté garlic, beans, and tomatoes in hot oil in a cast-iron skillet 5 minutes or until tomatoes begin to blister; add broth.
  2. Cover and cook 3 minutes or until green beans are tender; uncover and stir in vinegar.
  3. Cook 2 minutes or until liquid is slightly thickened.
