Bacon-Wrapped Chicken

Ingredients
- 3 (6-oz) boneless, skinless chicken breasts
- ½ Tbsp chili powder
- ⅛ tsp salt
- ⅛ tsp cayenne pepper
- 6 slices bacon
- 1 Tbsp olive oil
- ½ (8-oz) container guacamole
- ¼ cup sour cream
- 1 Tbsp chopped fresh flat-leaf parsley
Instructions
- Preheat oven to 425°F. Sprinkle chicken with chili powder, salt, and cayenne pepper. Wrap each piece with 2 slices bacon.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side. Transfer chicken to a foil-lined baking sheet.
- Bake 10 minutes or until chicken is done and bacon is crisp.
- Meanwhile, stir together guacamole, sour cream, and parsley; serve sauce with chicken.

- ¾ lb green beans, trimmed
- 1 cup grape tomatoes
- 1 Tbsp olive oil
- ¼ cup low-sodium chicken broth
- 1 Tbsp balsamic vinegar
Side Dish Instructions
- Sauté garlic, beans, and tomatoes in hot oil in a cast-iron skillet 5 minutes or until tomatoes begin to blister; add broth.
- Cover and cook 3 minutes or until green beans are tender; uncover and stir in vinegar.
- Cook 2 minutes or until liquid is slightly thickened.
