Easy Garlic-Pepper Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp Montreal steak seasoning
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub chicken with seasoning.
  2. Cook chicken, in batches, in hot oil in a large ovenproof skillet over medium heat 3 minutes per side. Transfer skillet to oven. Bake 10 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (16-oz) pkg orzo
  • 1 (15-oz) pkg frozen green peas
  • 1 pint grape tomatoes, halved
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Cook orzo according to package directions; add peas during last 2 minutes of cooking. Drain and rinse under cold water; drain again.
  2. Toss orzo and peas with tomatoes and vinaigrette.
