Easy Garlic-Pepper Chicken
Orzo and Pea Salad
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp Montreal steak seasoning
- 2 Tbsp olive oil
Instructions
- Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub chicken with seasoning.
- Cook chicken, in batches, in hot oil in a large ovenproof skillet over medium heat 3 minutes per side. Transfer skillet to oven. Bake 10 minutes or until chicken is done.
Side Dish Ingredients
- 1 (16-oz) pkg orzo
- 1 (15-oz) pkg frozen green peas
- 1 pint grape tomatoes, halved
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Cook orzo according to package directions; add peas during last 2 minutes of cooking. Drain and rinse under cold water; drain again.
- Toss orzo and peas with tomatoes and vinaigrette.
