Shrimp Banh Mi Sandwiches

Ingredients

  • 1 (25-oz) pkg frozen popcorn shrimp
  • 1 (10-oz) pkg angel hair coleslaw
  • 1 (10-oz) pkg matchstick-cut carrots
  • 1 cup coarsely chopped fresh cilantro
  • 1 Tbsp dark sesame oil
  • 1 Tbsp rice wine vinegar
  • ½ cup mayonnaise
  • 2 Tbsp Sriracha hot sauce
  • 6 sub rolls, split and toasted

Instructions

  1. Bake shrimp according to package directions.
  2. Meanwhile, toss together coleslaw, carrots, cilantro, oil, and vinegar in a large bowl; season with salt and pepper to taste.
  3. Stir together mayonnaise and Sriracha. Spread mixture on cut side of rolls. Serve shrimp on rolls with desired amount of coleslaw.

Side Dish Ingredients

  • 1 (8-oz) bag potato chips
  • 1 lb seedless grapes, chilled

Side Dish Instructions

  1. Serve chips and grapes alongside sandwiches.
