Southern Pork and Tomato Grilled Cheese Sandwich

Ingredients

  • 12 slices home-style white bread
  • 2 (8-oz) pkg sliced Cheddar cheese
  • 1 (16-oz) pkg shredded pork in barbecue sauce
  • 2 tomatoes, thinly sliced
  • 1 (2.1-oz) pkg fully-cooked bacon
  • ½ cup butter, softened
  • 1 (5-oz) pkg baby arugula

Instructions

  1. Top half of bread slices with 1 slice cheese. Arrange pork over cheese. Top with tomato slices and bacon.
  2. Place remaining cheese slices over bacon, and cover with remaining bread slices. Spread softened butter over outsides of sandwiches.
  3. Cook sandwiches in a large nonstick skillet over medium-low heat, 4 to 5 minutes per side or until bread is toasted and cheese is melted.
  4. Separate bread slices, and add arugula to each.

Side Dish Ingredients

  • 1 (10-oz) pkg potato chips
  • 3 apples, sliced

Side Dish Instructions

  1. Serve chips and apples with sandwiches.
