Cilantro-Lime London Broil

Chipotle Mashed Potatoes and Fire-Roasted Vegetables

Ingredients

  • 1½ lb London broil steak
  • 5 Tbsp olive oil, divided
  • 2 tsp Montreal steak seasoning
  • 1½ cups firmly packed fresh cilantro leaves
  • 2 Tbsp fresh lime juice
  • 1 tsp garlic powder
  • ½ tsp salt

Instructions

  1. Brush steak with 1 Tbsp oil; sprinkle with Montreal seasoning.
  2. Preheat grill or grill pan to medium-high heat; add steak, and cook 7 to 9 minutes per side or to desired doneness.
  3. Meanwhile process 4 Tbsp oil, cilantro, lime juice, garlic powder, and salt in a blender until smooth, scraping sides as needed.
  4. Cut steak diagonally across the grain; serve with sauce.

  • 2 (24-oz) pkg refrigerated mashed potatoes
  • ½ cup sour cream
  • ½ tsp ground chipotle chile pepper
  • 2 (12-oz) pkg frozen fire-roasted zucchini, carrots, and onion

Side Dish Instructions

  1. Prepare mashed potatoes according to package directions, stir in sour cream and chipotle pepper.
  2. Steam vegetables according to package directions; season to taste.
