Cilantro-Lime London Broil
Chipotle Mashed Potatoes and Fire-Roasted Vegetables
Ingredients
- 1½ lb London broil steak
- 5 Tbsp olive oil, divided
- 2 tsp Montreal steak seasoning
- 1½ cups firmly packed fresh cilantro leaves
- 2 Tbsp fresh lime juice
- 1 tsp garlic powder
- ½ tsp salt
Instructions
- Brush steak with 1 Tbsp oil; sprinkle with Montreal seasoning.
- Preheat grill or grill pan to medium-high heat; add steak, and cook 7 to 9 minutes per side or to desired doneness.
- Meanwhile process 4 Tbsp oil, cilantro, lime juice, garlic powder, and salt in a blender until smooth, scraping sides as needed.
- Cut steak diagonally across the grain; serve with sauce.

- 2 (24-oz) pkg refrigerated mashed potatoes
- ½ cup sour cream
- ½ tsp ground chipotle chile pepper
- 2 (12-oz) pkg frozen fire-roasted zucchini, carrots, and onion
Side Dish Instructions
- Prepare mashed potatoes according to package directions, stir in sour cream and chipotle pepper.
- Steam vegetables according to package directions; season to taste.
