Spinach-Ground Beef Meat Loaf

- 2 lb ground beef
- ½ cup diced onion (optional)
- ½ (6-oz) pkg baby spinach, finely chopped
- ¼ cup tomato paste
- ¼ cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 Tbsp chopped fresh thyme (or use 2 tsp dried thyme)
- 1 tsp garlic salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Combine all ingredients in a large bowl. Mix until just combined. Place in a lightly greased 9- x 5-inch loaf pan, or shape into a lightly greased loaf on a rack in a broiler pan.
- Bake 55 minutes to 1 hour or until no longer pink in center.

- 1 lb carrots, cut into 1-inch pieces
- 1 lb parsnips, cut into 1-inch pieces
- 1 red bell pepper, chopped
- 2 Tbsp olive oil
- 1 tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients in a bowl. Arrange in a single layer on a roasting pan.
- Bake 25 minutes or until tender, stirring twice.
