Spinach-Ground Beef Meat Loaf

Ingredients

  • 2 lb ground beef
  • ½ cup diced onion (optional)
  • ½ (6-oz) pkg baby spinach, finely chopped
  • ¼ cup tomato paste
  • ¼ cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 Tbsp chopped fresh thyme (or use 2 tsp dried thyme)
  • 1 tsp garlic salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 425°F. Combine all ingredients in a large bowl. Mix until just combined. Place in a lightly greased 9- x 5-inch loaf pan, or shape into a lightly greased loaf on a rack in a broiler pan.
  2. Bake 55 minutes to 1 hour or until no longer pink in center.

Side Dish Ingredients

  • 1 lb carrots, cut into 1-inch pieces
  • 1 lb parsnips, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 2 Tbsp olive oil
  • 1 tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients in a bowl. Arrange in a single layer on a roasting pan.
  2. Bake 25 minutes or until tender, stirring twice.
