Frozen Banana-Almond Butter Bars

Ingredients

  • 4 bananas, sliced and frozen
  • ½ cup almond butter, divided
  • ¼ cup coconut oil, melted
  • ½ cup unsweetened baking cocoa
  • 2 Tbsp pure maple syrup
  • ¼ cup chopped almonds

Instructions

  1. Process bananas and ¼ cup almond butter in a food processor until smooth. Spread in a greased 8-inch square baking dish, and top with ¼ cup almond butter. Swirl with a knife or wooden pick.
  2. Freeze 3 hours or until frozen solid. Use a hot knife to cut into 4 squares. Return to freezer.
  3. Whisk together oil, cocoa, and syrup in a shallow bowl until smooth.
  4. Line a baking sheet with parchment paper. Remove squares from freezer.
  5. Dip top and bottom of each bar in melted chocolate. Place bars on parchment paper; sprinkle with nuts. Freeze 30 minutes or until chocolate is set.
