Ingredients
- 4 slices center cut bacon
- 1 Tbsp butter, softened and divided
- 4 slices Italian bread
- 1 small pear, sliced
- ½ cup shredded sharp Cheddar cheese
- 2 slices Gouda cheese
- 1 Tbsp chopped fresh rosemary (or use fresh thyme)
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
- Spread ½ Tbsp butter on one side of bread slices. Divide bacon between 2 bread slices, buttered side down. Top with pear slices, cheese, rosemary, and bread slices, buttered side up.
- Melt ½ Tbsp butter in a large skillet over medium-high heat. Cook sandwiches 3 to 4 minutes per side or until golden and cheese is melted.

- 1 Tbsp olive oil
- 2 tsp white wine vinegar
- 1 tsp honey
- 3 cups spinach
- ¼ cup thinly sliced red onion
- 2 Tbsp roasted, salted pepitas (pumpkin seeds)

- Whisk together oil, vinegar, and honey in a bowl; Add spinach, onion, and pepitas; toss.
