Ingredients

  • 4 slices center cut bacon
  • 1 Tbsp butter, softened and divided
  • 4 slices Italian bread
  • 1 small pear, sliced
  • ½ cup shredded sharp Cheddar cheese
  • 2 slices Gouda cheese
  • 1 Tbsp chopped fresh rosemary (or use fresh thyme)

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Spread ½ Tbsp butter on one side of bread slices. Divide bacon between 2 bread slices, buttered side down. Top with pear slices, cheese, rosemary, and bread slices, buttered side up.
  3. Melt ½ Tbsp butter in a large skillet over medium-high heat. Cook sandwiches 3 to 4 minutes per side or until golden and cheese is melted.

  • 1 Tbsp olive oil
  • 2 tsp white wine vinegar
  • 1 tsp honey
  • 3 cups spinach
  • ¼ cup thinly sliced red onion
  • 2 Tbsp roasted, salted pepitas (pumpkin seeds)

  1. Whisk together oil, vinegar, and honey in a bowl; Add spinach, onion, and pepitas; toss.
