Moo Shu Chicken Lettuce Wraps

Ingredients

  • 1 (8-oz) pkg sliced mushrooms
  • ½ Tbsp minced garlic
  • ½ Tbsp ginger paste
  • 1 Tbsp sesame oil
  • ½ (16-oz) pkg tricolor coleslaw
  • 1½ cups shredded rotisserie chicken
  • ¼ cup hoisin sauce, divided
  • ⅛ tsp salt
  • 1 head Bibb lettuce, leaves separated

Instructions

  1. Cook mushrooms, garlic, and ginger paste in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned.
  2. Stir in slaw, chicken, 1 Tbsp hoisin sauce, and salt; cook 2 to 3 minutes or until slaw is crisp-tender.
  3. Arrange lettuce in 3 stacks; top with chicken mixture. Wrap lettuce around filling, and serve wraps with 3 Tbsp hoisin sauce.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable jasmine rice
  • ½ Tbsp toasted sesame seeds
  • 1 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions. Stir in sesame seeds and soy sauce.
