Cheesy Vegetable Orzo
Ingredients
- 4 cups frozen stir-fry vegetables
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2½ Tbsp all-purpose flour
- 3 cups milk
- 3 cups low-sodium vegetable broth
- 2¼ cups orzo
- 1½ cups shredded mozzarella cheese
- ¾ tsp salt
- ½ tsp pepper
Instructions
- Cook vegetables and garlic in hot oil in a Dutch oven over medium-high heat 8 to 10 minutes or until lightly browned. Add flour, stirring until blended.
- Add milk, broth, and orzo; bring to a simmer. Reduce heat to medium, and cook 7 minutes, stirring occasionally, until orzo is almost tender.
- Stir in cheese, salt, and pepper; cook 2 to 3 minutes or until thickened.
