Sausage, Spinach, and Mushrooms Tortellini

Ingredients

  •  2 (12-oz) pkg three-cheese tortellini
  • 1 (12-oz) pkg mild Italian chicken sausage, sliced
  • 2 cloves garlic, minced
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 (5-oz) pkg baby spinach
  • ¼ cup white wine (or use chicken broth)
  • ½ cup chopped walnuts
  • 1 cup freshly grated Parmesan cheese
  • ¼ tsp pepper

Instructions

  1. Cook tortellini according to package directions; drain over a small bowl, reserving ½ to ¾ cup pasta water.
  2. Meanwhile, cook sausage, garlic, and mushrooms in a large nonstick skillet over medium heat 10 minutes or until sausage is browned.
  3. Add spinach and wine; cook 2 minutes or until spinach wilts.
  4. Add tortellini and reserved ½ cup pasta water to pan; toss. Sprinkle with nuts, cheese, and pepper.
