Sausage, Spinach, and Mushrooms Tortellini
Ingredients
- 2 (12-oz) pkg three-cheese tortellini
- 1 (12-oz) pkg mild Italian chicken sausage, sliced
- 2 cloves garlic, minced
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 (5-oz) pkg baby spinach
- ¼ cup white wine (or use chicken broth)
- ½ cup chopped walnuts
- 1 cup freshly grated Parmesan cheese
- ¼ tsp pepper
Instructions
- Cook tortellini according to package directions; drain over a small bowl, reserving ½ to ¾ cup pasta water.
- Meanwhile, cook sausage, garlic, and mushrooms in a large nonstick skillet over medium heat 10 minutes or until sausage is browned.
- Add spinach and wine; cook 2 minutes or until spinach wilts.
- Add tortellini and reserved ½ cup pasta water to pan; toss. Sprinkle with nuts, cheese, and pepper.
