Beefy Pasta Skillet Dinner
Ingredients
- 1½ lb ground beef
- 2 cloves garlic, minced
- 1 (28-oz) can diced tomatoes
- 2 cups low-sodium chicken broth
- 3 zucchini, halved lengthwise and thinly sliced
- 3 cups rotini pasta (or use fusilli)
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp pepper
- 1 cup shredded part-skim mozzarella cheese
Instructions
- Cook beef and garlic in a large skillet over medium heat until beef is browned and crumbly. Drain.
- Stir in tomatoes, broth, zucchini, pasta, Italian seasoning, salt, and pepper.
- Bring to a boil over medium-high heat; cover, reduce heat, and simmer 10 minutes or until pasta is tender. Sprinkle with cheese.
