Red Velvet Whoopie Pies

Ingredients
- 1 box super moist devil's food cake mix
- ½ cup water
- ½ cup vegetable oil
- 3 eggs
- 2 Tbsp red food color
- 1 (3.9-oz) box chocolate instant pudding mix
- 1 (16-oz) can cream cheese frosting
Instructions
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
- Beat cake mix, water, oil, eggs, food color, and pudding mix in a large bowl on LOW speed with an electric mixer until ingredients are just blended; then beat on HIGH 1 minute longer.
- Drop batter by level ¼ cupfuls onto prepared baking sheets, about 2 inches apart. Bake 13 to 16 minutes or until cookies are set.
- Cool cookies 5 minutes; transfer to a wire rack to cool completely.
- Spread cream cheese frosting onto flat side of half the cookies; sandwich remaining cookies on top. Store in refrigerator.
