Pesto-Rubbed Beef Roast

Ingredients

  • 3 Tbsp pesto
  • ½ Tbsp lemon juice
  • ¼ tsp salt
  • ½ tsp pepper
  • ¾ lb boneless chuck roast, trimmed
  • ½ cup low-sodium beef broth

Instructions

  1. Combine pesto, lemon juice, salt, and pepper in a small bowl.
  2. Rub mixture over beef. Transfer to a 4- to 5-quart slow cooker. Add broth.
  3. Cover and cook on LOW 6 to 7 hours or until beef is tender.

Side Dish Ingredients

  • 1½ cups grape tomatoes, halved
  • 3 oz small fresh mozzarella cheese balls (ciliegini), cut up
  • ¼ cup fresh basil leaves
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Combine all ingredients in a bowl. Chill until ready to serve.
