Pesto-Rubbed Beef Roast
Quick Caprese TossIngredients
- 3 Tbsp pesto
- ½ Tbsp lemon juice
- ¼ tsp salt
- ½ tsp pepper
- ¾ lb boneless chuck roast, trimmed
- ½ cup low-sodium beef broth
Instructions
- Combine pesto, lemon juice, salt, and pepper in a small bowl.
- Rub mixture over beef. Transfer to a 4- to 5-quart slow cooker. Add broth.
- Cover and cook on LOW 6 to 7 hours or until beef is tender.
Side Dish Ingredients
- 1½ cups grape tomatoes, halved
- 3 oz small fresh mozzarella cheese balls (ciliegini), cut up
- ¼ cup fresh basil leaves
- 2 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
Side Dish Instructions
- Combine all ingredients in a bowl. Chill until ready to serve.
