Beefy Pasta Skillet Dinner

Ingredients

  • ¾ lb ground beef
  • ½ cup chopped onion
  • 1 tsp minced garlic
  • 1 (15-oz) can fire-roasted crushed tomatoes
  • 1 cup chicken broth
  • 1 zucchini, halved lengthwise and sliced
  • 1½ cups rotini pasta
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly. Drain and return to skillet.
  2. Stir in tomatoes, broth, zucchini, uncooked pasta, and Italian seasoning. Bring to a boil over medium-high heat; cover, reduce heat, and simmer 10 minutes or until pasta is just tender. Season with salt and pepper to taste. Sprinkle with cheese .
