Sautéed Grouper with Tomato-Avocado Topping

Ingredients

  • 1 organic Roma tomato, seeded and chopped
  • 1 avocado, diced
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ lb grouper fillets (or use flounder)
  • 1 Tbsp olive oil

Instructions

  1. Combine tomato, avocado, cilantro, lime juice, garlic powder, and ¼ tsp each salt and pepper.
  2. Sprinkle fish with ¼ tsp each salt and pepper.
  3. Cook fish in hot oil in a nonstick skillet 3 to 4 minutes per side or until fish flakes with a fork.
  4. Top each serving with Tomato-Avocado Topping.

  • 4 oz (about ⅔ cup) whole wheat orzo
  • ½ lb green beans, trimmed
  • ¼ cup water
  • 1 Tbsp olive oil
  • 1 green onion, chopped
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Place green beans in a large skillet over medium-high heat; add ¼ cup water. Cover and steam 5 minutes or until crisp tender; uncover. Add oil, onion, salt, and pepper; cook 3 minutes or until liquid evaporates.
