Sautéed Grouper with Tomato-Avocado Topping

Ingredients
- 1 organic Roma tomato, seeded and chopped
- 1 avocado, diced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- ½ lb grouper fillets (or use flounder)
- 1 Tbsp olive oil
Instructions
- Combine tomato, avocado, cilantro, lime juice, garlic powder, and ¼ tsp each salt and pepper.
- Sprinkle fish with ¼ tsp each salt and pepper.
- Cook fish in hot oil in a nonstick skillet 3 to 4 minutes per side or until fish flakes with a fork.
- Top each serving with Tomato-Avocado Topping.
Side Dish Ingredients
- 4 oz (about ⅔ cup) whole wheat orzo
- ½ lb green beans, trimmed
- ¼ cup water
- 1 Tbsp olive oil
- 1 green onion, chopped
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook orzo according to package directions.
- Place green beans in a large skillet over medium-high heat; add ¼ cup water. Cover and steam 5 minutes or until crisp tender; uncover. Add oil, onion, salt, and pepper; cook 3 minutes or until liquid evaporates.
