Ingredients

  • ½ (12-oz) pkg orecchiette pasta
  • ½ lb Italian chicken sausage, casings removed
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 1 cup baby spinach
  • ½ cup low-sodium chicken broth
  • 2 Tbsp freshly grated Parmesan cheese (or use shaved)

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, cook sausage, garlic, and red pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly.
  3. Add spinach and broth, stirring until spinach wilts.
  4. Stir in pasta. Gradually add cheese, stirring until creamy, about 4 to 5 minutes.

Side Dish Ingredients

  • 1 (9-oz) pkg chopped romaine lettuce
  • ¼ cup refrigerated yogurt Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup Caesar croutons

Side Dish Instructions

  1. Toss together lettuce and dressing in a bowl. Sprinkle with cheese and croutons.
