Turkey Sausage and Cauliflower Gratin

Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • ½ (12-oz) pkg sweet Italian turkey sausage links, casings removed
  • 1 cup chopped onion
  • 3 small cloves garlic, minced
  • 1 Tbsp olive oil
  • 1½ cups marinara sauce
  • ¼ cup pitted kalamata olives, coarsely chopped
  • ¾ cup shredded mozzarella cheese 

Instructions

  1. Preheat oven to 400°F. Cook cauliflower according to package directions.
  2. Meanwhile, sauté sausage, onion, and garlic in hot oil in a large skillet over medium-high heat 10 minutes or until browned and crumbly.
  3. Stir in cauliflower, marinara sauce, and olives.
  4. Spoon in a lightly greased 9-inch baking dish. Top with cheese.
  5. Bake 20 minutes or until thoroughly heated.

  • 1 Tbsp olive oil
  • 1 Tbsp low-sodium chicken broth
  • 1 (10-oz) pkg baby spinach
  • ½ tsp apple cider vinegar
  • ¼ tsp pepper
  • ⅛ tsp garlic powder

Side Dish Instructions

  1. Heat oil and broth in a skillet over medium heat.
  2. Add spinach, vinegar, pepper, and garlic powder; cook 4 to 5 minutes or until spinach is wilted.
