Turkey Sausage and Cauliflower Gratin
Wilted SpinachIngredients
- 1 (12-oz) pkg cauliflower florets
- ½ (12-oz) pkg sweet Italian turkey sausage links, casings removed
- 1 cup chopped onion
- 3 small cloves garlic, minced
- 1 Tbsp olive oil
- 1½ cups marinara sauce
- ¼ cup pitted kalamata olives, coarsely chopped
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F. Cook cauliflower according to package directions.
- Meanwhile, sauté sausage, onion, and garlic in hot oil in a large skillet over medium-high heat 10 minutes or until browned and crumbly.
- Stir in cauliflower, marinara sauce, and olives.
- Spoon in a lightly greased 9-inch baking dish. Top with cheese.
- Bake 20 minutes or until thoroughly heated.

- 1 Tbsp low-sodium chicken broth
- 1 (10-oz) pkg baby spinach
- ½ tsp apple cider vinegar
- ¼ tsp pepper
- ⅛ tsp garlic powder
Side Dish Instructions
- Heat oil and broth in a skillet over medium heat.
- Add spinach, vinegar, pepper, and garlic powder; cook 4 to 5 minutes or until spinach is wilted.
