Ingredients

  • 3 limes
  • 1 chipotle chile pepper in adobo sauce (from a 7-oz can), chopped 
  • ½ Tbsp adobo sauce (from can)
  • ¼ cup fresh chopped cilantro, divided
  • 3 Tbsp olive oil
  • ¾ tsp salt
  • 2 small cloves garlic, minced
  • ¾ lb flank steak, cut into ¼-inch slices
  • 6 soft taco-size low-carb, low-fat flour tortillas
  • 3 Tbsp sour cream
  • 1 tomato, chopped
  • ½ cup chopped red onion
  • 3 Tbsp crumbled cotija cheese

Instructions

  1. Squeeze juice from limes. Whisk together lime juice, chipotle peppers, adobo sauce, 2 Tbsp cilantro, oil, salt, and garlic. Add steak; seal and marinate in refrigerator 8 hours or overnight.
  2. Remove steak from marinade; discard marinade.
  3. Cook steak in a large skillet over medium-high heat 5 to 7 minutes or to desired doneness.
  4. Top tortillas with steak, sour cream, tomato, onion, cheese, and 2 Tbsp cilantro.

  • 1 yellow squash, cut into half moons
  • 1 zucchini, cut into half moons
  • ¼ cup sliced red onion
  • 2 small cloves garlic, minced
  • 1 Tbsp olive oil
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp crumbled cotija cheese
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Sauté squash, zucchini, onion, and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until browned.
  2. Remove from skillet; toss with cilantro, cheese, and lime juice.
