White Bean and Farro Salad
Spicy Roasted Broccolini
Ingredients
- ¾ cup pearled farro
- 1 (15-oz) cans no-salt-added cannellini beans, drained and rinsed
- 1½ Tbsp olive oil
- ½ tsp lemon zest
- 1½ Tbsp lemon juice
- 2 Tbsp pitted kalamata olives, halved
- 2 Tbsp minced red onion
- 1 Tbsp chopped fresh mint
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Cook farro according to package directions; drain. Add farro and beans to a large bowl.
- Whisk together remaining ingredients. Drizzle oil mixture over farro; toss. Chill at least 1 hour.

- 1 bunch Broccolini, trimmed
- 1 Tbsp olive oil
- 1 clove garlic, minced
- ¼ tsp crushed red pepper
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup chopped walnuts
Side Dish Instructions
- Preheat oven to 425°F. Combine Broccolini, oil, garlic, red pepper, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 12 minutes or until tender, stirring once and adding nuts during last 2 minutes of baking.
