White Bean and Farro Salad

Ingredients

  • ¾ cup pearled farro
  • 1 (15-oz) cans no-salt-added cannellini beans, drained and rinsed
  • 1½ Tbsp olive oil
  • ½ tsp lemon zest
  • 1½ Tbsp lemon juice
  • 2 Tbsp pitted kalamata olives, halved
  • 2 Tbsp minced red onion
  • 1 Tbsp chopped fresh mint
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook farro according to package directions; drain. Add farro and beans to a large bowl.
  2. Whisk together remaining ingredients. Drizzle oil mixture over farro; toss. Chill at least 1 hour.

  • 1 bunch Broccolini, trimmed
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ¼ tsp crushed red pepper
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup chopped walnuts

Side Dish Instructions

  1. Preheat oven to 425°F. Combine Broccolini, oil, garlic, red pepper, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 12 minutes or until tender, stirring once and adding nuts during last 2 minutes of baking.
