Ranch Pork Tenderloin

Mashed Potatoes and Green Bean Bites

Ingredients

  • 1 (18.4-oz) pork tenderloin
  • ½ (1-oz) envelope Ranch dressing mix

Instructions

  1. Place pork in a lightly greased 4-quart slow cooker. Sprinkle Ranch dressing all over pork.
  2. Cover and cook on LOW 4 to 6 hours or until pork is tender and a meat thermometer reads 145°F. Thinly slice to serve.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (12-oz) pkg green beans
  • 1 clove garlic, chopped
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook potatoes in microwave according to package directions.
  2. Cook green beans according to package directions. Cool and cut half of beans into bite-size pieces. Reserve remaining beans for another meal.
  3. Cook garlic in hot oil in a skillet over medium-high heat ½ minute. Add beans; cook 1 minute. Season with salt to taste.
