Creole Chicken Thighs

Ingredients

  • 3 lb bone-in chicken thighs, skinned
  • 1 tsp Creole seasoning
  • 2 Tbsp avocado oil
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 large tomatoes, chopped

Instructions

  1. Sprinkle chicken with Creole seasoning. Cook in hot oil in a large, deep skillet over medium-high heat 3 minutes per side or until browned; remove from skillet.
  2. Add garlic, celery, onion, bell pepper, and tomatoes to skillet; sauté 3 minutes or until tender and slightly thickened.
  3. Return chicken to skillet; cover and simmer 15 to 20 minutes or until chicken is done.

Side Dish Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • ½ cup extra virgin olive oil
  • 2 cloves garlic, mashed
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Cook cauliflower in boiling water to cover in a saucepan 10 minutes or until tender; drain well. Return cauliflower to pan over low heat.
  2. Stir in oil, garlic, salt, and pepper. Mash with a potato masher until smooth.
