Creole Chicken Thighs
Garlic Mashed CauliflowerIngredients
- 3 lb bone-in chicken thighs, skinned
- 1 tsp Creole seasoning
- 2 Tbsp avocado oil
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 large tomatoes, chopped
Instructions
- Sprinkle chicken with Creole seasoning. Cook in hot oil in a large, deep skillet over medium-high heat 3 minutes per side or until browned; remove from skillet.
- Add garlic, celery, onion, bell pepper, and tomatoes to skillet; sauté 3 minutes or until tender and slightly thickened.
- Return chicken to skillet; cover and simmer 15 to 20 minutes or until chicken is done.
Side Dish Ingredients
- 2 (12-oz) pkg cauliflower florets
- ½ cup extra virgin olive oil
- 2 cloves garlic, mashed
- 1 tsp salt
- 1 tsp pepper
Side Dish Instructions
- Cook cauliflower in boiling water to cover in a saucepan 10 minutes or until tender; drain well. Return cauliflower to pan over low heat.
- Stir in oil, garlic, salt, and pepper. Mash with a potato masher until smooth.
