Asian Pork Noodle Soup

Ingredients

  • 1 Tbsp vegetable oil
  • 1 (4-lb) bone-in Boston butt pork roast, well trimmed
  • 2 (32-oz) cartons low-sodium chicken broth
  • 1½ cups chopped onion
  • ⅔ cup coarsely chopped cilantro leaves and stems (or use parsley)
  • 3 cloves garlic, minced
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp grated ginger
  • 1 tsp garlic-chili sauce
  • 1 tsp ground coriander
  • 1 (8-oz) pkg rice noodles
  • Toppings: basil leaves, cilantro leaves, lime wedges, and Asian chili-garlic sauce

Instructions

  1. Heat oil in a large skillet over medium-high heat; add roast, and brown on all sides. Transfer to a 5- to 7-quart slow cooker.
  2. Add broth, onion, cilantro, garlic, soy sauce, ginger, chili sauce, and coriander.
  3. Cover and cook on LOW 8 hours or until pork is tender.
  4. Remove pork from cooker; shred with 2 forks, discarding fat and bone.
  5. Strain cooking liquid from cooker, discarding solids.
  6. Return strained liquid to cooker along with roast, 2 cups water, and rice noodles.
  7. Cook on HIGH 20 to 30 minutes or until noodles are tender.
  8. Serve with desired toppings.
