Spicy Orange Peel Shrimp

Ingredients

  • 1 (18-oz) pkg frozen breaded popcorn shrimp
  • ⅓ cup no-pulp orange juice
  • 1½ Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp honey
  • 1 tsp orange zest
  • ½ Tbsp cornstarch
  • ½ Tbsp ginger paste

Instructions

  1. Fry or bake shrimp according to package directions.
  2. Meanwhile, whisk together orange juice, soy sauce, vinegar, chili sauce, honey, orange zest, and cornstarch in a bowl.
  3. Bring sauce to a boil in a large skillet over medium-high heat; reduce heat, and simmer 2 to 3 minutes or until sauce is thickened.
  4. Stir in ginger paste and shrimp; toss. Serve over rice.

Side Dish Ingredients

  • 1 crown broccoli, cut into florets
  • 2 cloves garlic, minced
  • 1½ Tbsp olive oil
  • ½ cup long-grain white rice

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together broccoli, garlic, and oil on a rimmed baking sheet. Bake 15 minutes or until crisp-tender.
  2. Meanwhile, cook rice according to package directions.
