Spicy Honey Mustard-Glazed Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ tsp garlic salt
  • ⅛ tsp cayenne pepper
  • ¼ tsp black pepper
  • 1 Tbsp olive oil
  • 2 Tbsp honey
  • 2 Tbsp apple cider vinegar
  • ½ Tbsp Dijon mustard

Instructions

  1. Preheat oven to 350°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together garlic salt and peppers; rub all over chicken. Cook chicken in hot oil in a cast-iron skillet over medium-high heat 3 minutes per side or until browned.
  3. Stir together honey, vinegar, and mustard; brush on chicken. Transfer skillet to oven, and bake 10 minutes or until chicken is done.

Side Dish Ingredients

  • ½ (32-oz) pkg frozen deli-style roasted potatoes
  • 1 cup shredded Cheddar cheese
  • 1 green onion, thinly sliced
  • ½ (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Bake potatoes according to package directions; sprinkle with cheese, return to oven, and bake until cheese is melted. Sprinkle with onion.
  2. Steam green beans according to package directions.
