Three-Cheese Penne Bake
Roasted Broccoli
Ingredients
- 12 oz whole-grain penne pasta
- 1 (24.5-oz) jar low-sodium tomato-basil pasta sauce
- ¾ cup part-skim ricotta cheese
- 2 Tbsp freshly grated Parmesan cheese
- ¾ tsp Italian seasoning
- 3 cloves garlic, minced
- ¾ tsp salt
- 6 (0.74-oz) slices reduced-fat Swiss cheese, torn
Instructions
- Preheat oven to 400°F. Cook pasta according to package directions. Toss pasta with sauce, ricotta, Parmesan, seasoning, garlic, and salt.
- Spread mixture in a greased 13- x 9-inch baking dish. Top with Swiss cheese. Bake 20 to 25 minutes or until bubbly and browned.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together broccoli, oil, salt, and pepper over a large rimmed baking sheet; spread in a single layer.
- Bake 15 to 20 minutes or until golden, stirring once. Serve alongside pasta.
