Bacon, Zucchini, and Red Pepper Quiche

Ingredients

  • 8 slices center-cut bacon
  • 1 red bell pepper, seeded and diced
  • 1 zucchini, grated
  • ½ onion, diced
  • 8 large eggs
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F. Cook bacon in a large nonstick skillet over medium heat 7 to 9 minutes or until crisp. drain, reserving drippings in pan. Crumble bacon.
  2. Cook bell pepper, zucchini, and onion in hot drippings 5 minutes or until tender.
  3. Whisk together eggs, seasoning, salt, and pepper in a large bowl. Stir in bacon and vegetable mixture; transfer to a greased pie plate. Bake 35 to 40 minutes or until center is set.
