Bacon, Zucchini, and Red Pepper Quiche

Ingredients
- 8 slices center-cut bacon
- 1 red bell pepper, seeded and diced
- 1 zucchini, grated
- ½ onion, diced
- 8 large eggs
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 350°F. Cook bacon in a large nonstick skillet over medium heat 7 to 9 minutes or until crisp. drain, reserving drippings in pan. Crumble bacon.
- Cook bell pepper, zucchini, and onion in hot drippings 5 minutes or until tender.
- Whisk together eggs, seasoning, salt, and pepper in a large bowl. Stir in bacon and vegetable mixture; transfer to a greased pie plate. Bake 35 to 40 minutes or until center is set.
