Peppered Pork Tenderloin

Ingredients
- 1 (18.4-oz) pkg pork tenderloin
- 1 Tbsp olive oil
- ½ tsp pepper
- ¼ tsp salt
- ½ cup low-sodium chicken broth
- ¼ cup white wine
- 2 Tbsp fresh chopped parsley
- 2 green onions, chopped
- ½ tsp cornstarch
- 1 small clove garlic, minced
Instructions
- Cook pork in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done. Remove from skillet; sprinkle with pepper and salt.
- Bring broth, wine, parsley, green onions, cornstarch, and garlic to a boil in same skillet; cook 1 minute. Reduce heat, and cook 1 minute or until slightly thick. Drizzle sauce over pork.

- 1 English cucumber, sliced lengthwise and crosswise
- ½ cup chopped red bell pepper
- ½ red onion, sliced
- ½ cup crumbled feta cheese
- ¼ cup pitted kalamata olives
- ¾ tsp Greek seasoning
- ¼ tsp pepper
- 1½ Tbsp olive oil
- 1 Tbsp red wine vinegar
Side Dish Instructions
- Toss cucumber, bell pepper, onion, cheese, olives, seasoning, and pepper in a large bowl. Drizzle with oil and vinegar; toss.
