Slow Cooker Coq au Vin Meatballs
Browned Butter Green Beans
Ingredients
- 1 cup red wine
- ¾ lb ground chicken (or use ground turkey)
- 1 large egg, lightly beaten
- 2 Tbsp panko breadcrumbs
- ¼ tsp pepper, divided
- ⅛ tsp salt
- 3 slices center cut bacon
- 1 cup low-sodium chicken broth
- 1 Tbsp tomato paste
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 2 carrots, sliced
- 2 shallots, quartered
- 4 sprigs fresh thyme, divided
- 1 bay leaf
- 3 Tbsp water
- 1½ tsp cornstarch
Instructions
- Cook wine in a medium saucepan over medium-high heat 10 to 15 minutes or until reduced by half.
- Meanwhile, mix together chicken, egg, breadcrumbs, ⅛ tsp pepper, and salt in a large bowl; shape into 9 balls.
- Cook bacon in a large skillet over medium-high heat 5 to 7 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon. Brown meatballs in hot drippings 5 minutes.
- Stir together wine, bacon, broth, tomato paste, mushrooms, carrots, shallots, 2 sprigs thyme, bay leaf, and ¼ tsp pepper in a 4- to 6-quart slow cooker. Add meatballs.
- Cook on LOW 7 hours. Whisk together water and cornstarch in a small bowl; add to cooker. Cook on HIGH 20 to 30 minutes or until thickened.
- Meanwhile, chop 2 sprigs thyme; sprinkle over coq au vin before serving.

- ⅛ tsp pepper
Side Dish Instructions
- Cook beans according to package directions.
- Melt butter in a small saucepan over medium heat. Cook 1 to 2 minutes or until just beginning to foam; toss with beans. Sprinkle with salt and pepper.
